Spring onion or Hara/Saga Pyaaz Subji Recipe

I love to eat hare pyaz ki sabji with garam garam Paratha (hot Indian bread). It absolutely is one of my favorite thing to pack for kid’s lunch- Just roll the saga pyaaz sabji in paratha and kids are good to go ! This is a popular vegetable side dish that goes with main course during winter months. And here is the best part :you can even use leftover Subji to make stuffed Parathas.

Spring onion (Green Scallions) or Hara/Saga Pyaaz Subji Recipe

Ingredients

2 bunches of Hara Pyaaz/Saga Pyaaz/Spring onion/Green Scallions
1 medium red onion, sliced
2 medium Aloo /Potato peeled and cubed
1 tsp dhania/coriander powder
1/2 tsp amchur /dry mango powder
1 tsp ajwain seeds/carom seeds
1/2 tsp Haldi/ Turmeric Powder
pinch of hing/asafoetida
1 tbsp oil
1/2 tsp garam masala powder
1 or 2 green chilies as per your taste
Salt (to taste)

Instructions

1. Remove the outer covering from the bulbs of the spring onions.
2. Wash the bunch properly and chop the leaves along with the Green Onion (saga pyaaz) bulbs.
3. Keep chopped green onion aside in a colander.

4. In a pan, heat the oil in medium flame. Now add ajwain, Green chilies, and heeng in the pan.

5. When the ajwain started to turn dark brown, add turmeric and the cubed potatoes.

6. Saute for about 2 minutes, then add 1/8 cup of water and cover the lid.

7. Wait for 10 minutes until potatoes become soft. Open the lid after 10 minutes, stir the potatoes and check that all the potatoes are soft by pressing them with the help of a spoon.

8. Now add chopped green onion/saga pyaaz and sliced red onion on medium flame. Let it cook in an open pan, to avoid sogginess.

9.  When onions are all done, in about 7-8 minutes, add salt, dhania/coriander powder, amchur/dry mango powder, garam masala, and mix everything well.spring-onion-saga-pyaz-sookhi-subji-recipe

10.After around 2 minutes,  the Subji is ready to serve.

Garnish with Green raw scallions,  cilantro and serve with hot Paratha or Chapati.
