Ingredients
1/2 cup Tuvar dal /split pigeon lentil
1/4 cup chopped onion
2 cup cubed Lauki/bottle gourd
1 cup chopped Bhindi/okra
1 cup cubed Brinjal (eggplant)
1 tbsp Sambar powder
1 tsp turmeric powder/haldi
Salt, as per taste
1/4 cup Tamarind paste /Imali paste
For tempring/tadka:
1 tsp Rai/sarso dana/mustard seeds
1 tsp raw Chana dal
2-3 red chilies
Cilantro leaves for garnishing
Instructions
1.This is one pot sambar recipe and is made very quickly. All you only need is your pressure cooker :)
Put washed lentil, lauki, onion, bhindi and eggplant inside the pressure cooker.
Now add turmeric powder, salt as per your taste and 2 cups water inside the cooker.
2. Close the lid of the pressure cooker , put on stove top in medium heat and wait for whistles.
3. After 4 whistles turn heat to low for 2 minutes and after 2 minutes turn it off.
4.After pressure released from the cooker,open the lid and add the one of very important ingredient -Tamarind paste.
Mine is homemade paste (I boiled tamarind in hot water for 10 minutes), so I used strainer to get paste into cooker.
5.Now add Sambhar Masala powder and mix it.
6.Put a small serving spoon or tadka pan in medium heat.Put oil, add mustard seeds, raw Chana dal and red chilies.
After 2-3 minutes when mustard seeds started splattering ,turn off the heat and add Tadka in Sambhar.
Serving Suggestion:
Garnish with Cilantro. Serve hot as just a Lentil soup or with rice, idli. Let me know how is it !
Sambhar is the main ingredient of the south Indian Cuisine. It is a healthy food option which is a mix of many vegetables and lentil. I love Sambhar with Idli and Dosa. Today I made Sambhar with 3 vegetables- Lauki ( bottle gourd) ,Bhindi (okra/lady finger) and Baigan (eggplant) and Tuvar dal. You can take this as lentil soup with other vegetables of your choice as well. The aroma of various spices in the Sambhar powder is very tempting and yummy.
I am using store bought Sambhar powder to save time, however, an authentic traditional Indian Sambhar uses freshly ground spices at home.
