Palak Paneer Instant Pot – Saag Paneer Cottage Cheese Gravy

The mighty Spinach blended with unique spices bring out an amazing recipe to satisfy everyone’s taste buds.  Palak or Spinach is loaded with iron and other nutrients while Indian cottage cheese is an excellent source of protein.  A win-win combination of nutrition and taste, right?

Ingredients

2 Pounds Of Washed Spinach Leaves
250gm/ 1/2 lb Paneer /Indian Cottage cheese cut into cubes
2 Medium Chopped Tomato or 1/2 cup of Tomato sauce
1/2 cup of Heavy Cream
1 tbsp.Ginger Paste
1 tsp. Haldi/Turmeric
1/2 tsp. Jeera/Cumin
A Pinch Of Hing/Asafetida
1 tsp. Coriander Powder
1/2 tsp. Garam Masala
1 tsp. Cumin powder
1/4 tsp. black pepper
1 Bay leaf
1-2 small Cinnamon Sticks
Red Chili Powder As Per Your Taste
Salt As Per Your Taste

Instructions

1. Wash spinach leaves properly. Although some packages come as pre-washed, I always like to wash them before cooking.
2. Boil spinach leaves inside a pot or microwave for about five minutes.

3. When the leaves cool down, puree them in a blender with 1/2 cups of water. After pureeing, the volume of the spinach will remain about 1 quart(950ml).

4. Turn on the Instant Pot in sauté mode in a medium heat setting.

5. Add oil, cumin seeds, bay leaf, cinnamon stick, and ginger paste.

6. Once the Cumin seeds start to splutter, add Haldi powder, black pepper, red chili powder, and 1/8 cup of water. Mix it well together.

7. Add tomato sauce or make a puree by using 2 medium tomatoes and add it into the pot and saute it.

8. Stir the mixture and add another 1/8 cup of water into the puree. Let it saute for 2-3 minutes. Wait until you will see oil start to separate from the tomatoes.
 
9. Now add coriander powder, Garam masala, Cumin powder with 1/8 cup of water into the pot and mix it together.

10. Add paneer cubes into the pot and mix it with all the spices, tomatoes, and the mixture.

11. Now, finally add the Green spinach puree to the pot. Mix the puree and saute it for 2 minutes. After 2 minutes, then cancel the saute mode by pressing the Cancel button.

12. If anything is stuck to the bottom, deglaze the pot properly to avoid a burn sign. Press cancel and close lid with the vent in sealing position.
13. Change the instant pot setting to pressure cook mode for 5 minutes in a high setting.
14. Once the instant pot beeps, you can let the pressure release by itself, or if you are in a hurry release the pressure manually.
15. Add some heavy cream and the yummy Palak Paneer is ready to serve
 
Serving suggestion- Serve with steamed rice and roti/naan.
